Oh, hello. Remember me? I disappeared into the depths of NY and was never heard from again? I'm baaaack to discuss a topic very close to my heart: cheese. I was invited by Président Cheese to participate in a cooking class hosted by Minneapolis' own Chef Gavin Kaysen of Spoon and Stable. It was a dream event if I've ever heard one.
As a Wisconsin native, my love for cheese runs deep. That being said, my knowledge of anything outside of cheddar has only been expanded in the last 5 years. A Brie here and a Manchego there have graced many a cheese plate in my home but I've been a little intimidated to go much further than a chunk o cheese and some baguette (which - don't get me wrong - is divine by any account).
